Though the ingredient list isn’t unusual for a tequila drink, the overall effect created by the Matador is striking. Served in a Champagne flute, the Matador makes an unexpected alternative to a Bellini for Sunday morning brunch. 3 oz pineapple juice
1 ½ oz tequila
juice of one lime
Fill a cocktail shaker halfway with ice and add all three ingredients. Shake thoroughly and strain into a chilled Champagne flute.
